The syrup and the thread

Cane syrup is boiled to saturation in a clay vessel and cotton thread strung across it, still warm. Nothing is added to it.

It grows in the dark

The vessel stands undisturbed and crystal gathers on the thread one layer at a time — no seed, no agitation, no forced heat.

Cleaved, never milled

The thread is lifted and the crystal broken by hand along its own facets. Only whole faces are kept; the rest returns to syrup.

Weighed and boxed

Weighed into a glass caddy, set in rosewood and emerald velvet with brass tongs and a scroll sealed in wax.

What exactly is mishri?+

Unrefined sugar grown as a crystal on cotton thread, used in India for centuries as both a sweetener and a vehicle for herbs. Ours is grown slowly in the dark, cleaved by hand, and never milled.

How is it different from rock candy?+

Rock candy is grown fast, from refined and bleached sugar, often with flavour and colour added. Nothing is added here, and nothing is hurried; the facets you see are the crystal's own.

When does the first US batch ship?+

When the crop is cut. We will not name a date we cannot keep — reserve a box and you will hear from us first, with the shipping window, before anything is charged.

What am I charged today?+

Nothing. Your card is authorized to hold the box and charged the day the batch is cleaved. You can cancel until then.

How does the preorder code work?+

MISHRI10 takes 10% off any box. It is carried into checkout from this page and holds until the first batch is cut. One code per order.

How is it taken?+

Small amounts, slowly. A crystal held in the mouth after speaking, or stirred into warm milk with tulsi. Traditionally taken with fennel to close a meal.
